Believe me, I’m all for traveling. In fact, I consider myself to be a bit of a travel junkie; it’s my addiction. Perched on the plug of an ancient dormant volcano, called Castle Rock, sits a beautiful castle which towers over the seemingly small buildings belonging to the ancient Scottish capital. It’s a place that echoes the footsteps of its past royal residents, the firing of cannons and the suffering of its prisoners. And some of the colorful artworks have been painted by none other than the female graffiti artist Zaira from Basel,Switzerland. Through her artworks Zaira has not only managed to add some color to the streets of many of Europe’s capitals and towns, but she’s also managed to leave a girly yet super edgy mark on what appears to be a predominantly male dominated art form.

Admit it, at one point or another you’ve had that one friend who loved to read. Whilst on my last vacation in Scotland a few weeks ago, I got the opportunity to visit Edinburgh’s Royal Botanic Gardens which allowed me to take a step back from the hustle and bustle of the city. It also granted me the opportunity to relax on a bench and enjoy the simple things nature has to offer – the scents, the fresh air and the pretty colors. Many of you out there may think that risotto is an Italian dish which is really difficult to prepare. Yet, I beg to differ. In fact, I think that it’s one of the biggest cooking myths out there. Take this pumpkin bacon risotto for example, not only is it an easy peasy dish to prepare, but it’s also great fun to make once you’ve mastered the basics!
I started preparing risotto with my mother a few years ago after trying it at a local Italian restaurant. Initially, I started by making an favorite of mine – mushroom and bacon risotto. And over the years, I’ve found that it’s fairly easy to make once you’ve got the process down to the tee. Fundamentally, all you need to create this dish is some time on your hands, a wee bit of patience and of course the right ingredients.
